Acclaimed York chef prepares to open new village restaurant in historic inn

York restaurateurs are following up on the success of their city restaurant by opening a new venture.

Joshua and Victoria Overington, who ran Le Cochon Aveugle on Walmgate, are preparing to open a restaurant with rooms on Main Street, Hovingham, north of Castle Howard.

Mýse – pronounced ‘meez’ – gets its name from an Anglo-Saxon word for ‘eating at the table’, and will boast a menu featuring Joshua’s elegant spin on traditional Yorkshire cooking.

Mýse will welcome its first diners on Thursday 29 June.

Le Cochon Aveugle on Walmgate closed last year to the dismay of York diners who loved the quality of the menu which saw it named among the UK’s top 100 restaurants.

That star quality has been applied to Josh and Vicky’s new venture.

Found in a 19th century inn, Mýse has a bar where guests will be able to enjoy an aperitif, and a dining room featuring a beamed ceiling, round tables and large windows.

Featuring many ingredients local to the North Yorkshire coast and countryside, the menu will include dishes such as:

  • a light broth of smoked eel and apple
  • ox cheek braised in ale with fried Yorkshire pudding batter and fermented cucumber
  • seeded sourdough baked in-house served with cultured butter and chicken drippings
  • hand-dived Orkney scallop baked in its shell with sea urchin butter
  • blood pancake with grilled langoustine, smoked pork fat and dog rose
  • day boat cod poached in aged-beef fat with 72 hour Senshyu onion broth and lemon verbena
  • Herdwick lamb saddle cooked over coals with tetragonia spinach and a lamb tongue, pearl barley and anchovy garum sauce
  • citrus marigold ice cream with English strawberries dipped in jam
  • day-old bread with house-made preserves
  • and a linseed caramel.

Prices and booking

The evening tasting menu will cost £110 per person, with shorter lunch menus available on Fridays and Saturdays at £80pp.

The wine pairing will cost an additional £85pp and a non-alcoholic pairing will cost £65pp, and at lunchtime, £65pp and £45pp respectively.

Rooms will start at £250 and must be booked alongside dinner for two at Mýse. Breakfast will be included.

The drinks menu will include cocktails, a wine list curated by London importer Keeling Andrew, English sparkling wine, Yorkshire-brewed beer and local gin.

And guests can book to stay the night at one of three renovated bedrooms furnished with finds from antique shops including Greybear, based in York.

Joshua said: “Mýse is an opportunity for us to finally realise our restaurant dream.

“We loved our time at Le Cochon Aveugle and think back on it fondly, but outgrew the space.

“This is our chance to create something more ambitious and a reflection on our incredible Yorkshire surroundings.

“I grew up here and it has been home to Victoria for ten years, so we wanted to create a welcoming, homely spot, each dish a nod to dinners that my Yorkshire grandmother would cook for me, but elevated and refined.”
