Six firefighters wearing breathing apparatus tackled the fire with hose reel jets, and the aerial platform was used to get to the roof.
Police put in road closures around the Castlegate area to allow emergency services to attend to the fire at the pub, also known as the Castle Vaults.
A North Yorkshire Fire & Rescue Service spokesperson said the blaze caused 30% damage to the roof.
