A fiery new restaurant is launching in York next month – with luxury steak and seafood

A new restaurant is launching in York – and it’s playing with fire.

The restaurant at luxury boutique hotel No.1, York by GuestHouse closed earlier this week as it goes through a full refurb to transform into Pearly Cow, the first of a brand-new restaurant group.

The brain-child of brotherly trio Tristan, James and Tom Guest – who successfully launched their boutique hotel group, GuestHouse in 2021 – Pearly Cow will be a restaurant that really focuses on ingredients, and is a celebration of the Yorkshire Dales and the nearby North Sea.

Its ‘slow-farmed meats, sea-fresh seafood, and just-picked plants’ will be cooked over fire, specifically a wood and charcoal Mibrasa Grill.

Diners can expect steaks from sirloin to cote de bouef, half grilled Whitby lobsters, and coal roasted aubergines among the delectable dishes.

There will also be an selection of crustaceans on ice, including fresh oysters served traditionally and potted Whitby crab.

The eponymous ‘Pearly Cow’ dish is a 45-day aged Hereford beef tartare and oyster cream with salted cucumber and caviar – so if you’re in the mood for a bit of posh nosh, this is the place to look.

The dishes will use quality local ingredients, as well as celebrating ingredients from across the British Isles too.

Pearly Cow expects to open in late March.

York will be the Pearly Cow’s launch location followed by Margate later in the year and Brighton early 2024. 

James Guest said, “We’re delighted that York will be our very first Pearly Cow.

“York has an exciting foodie scene, and we feel what we bring will compliment that. We’re looking forward to opening the doors and welcoming everyone this March.”

The design inside will reflect the Georgian exterior, and will aim to achieve a cosy and atmospheric experience with key elements such as dry-aging fridges alongside wine and cheese displays being central to the design. 

There will also be a private dining room with seating for up to 12 people, and alfresco dining in the summer months. 

Pearly Cow will be open Monday to Sunday for breakfast, lunch, and dinner.
